Bridge the Skills Gap

One of the hardest challenges you’ll come up against when looking for a career change is how you showcase your training and experience. Signature Staff Take Part in New Advanced Coffee Training

At Signature Living, we think it’s important that our staff have access to the very best training. That’s why in June we began working with local coffee roasters Adams and Russell to learn everything there is to know about making the perfect cup of coffee. Coffee is one of the most important things on earth to us and we know just how passionate our guests are about it, that’s why we’re on a mission to become coffee aficionados with our new advanced coffee training programme.

In order to raise the standard and the passion for coffee within the Signature Living team, we will be following a detailed two-tier program alongside Adams and Russell’s head Baristas to ensure our staff have an expert knowledge of coffee making. We have already completed most of the Level 1 training with the expert team at the roasting plant, so it’s time to move on to the more advanced techniques!

A few weeks ago, a lucky group of staff from our food and beverage team went along to the roasting plant based in Birkenhead to start their advanced Level 2 coffee training and we went along to learn a few things ourselves!

New Advanced Coffee Training

Since June, around 65% of our front of house food and beverage staff have now taken part in the Level 1 hot drinks course with Adams and Russell. This means the standard of coffee and Barista service across all of our venues has already hugely improved.

However, a few weeks ago a group of around 11 staff returned to the roasting plant to complete their Level 2. This course included a demonstration of how to blend our very own Velvet coffee to perfection, learning advanced coffee machine maintenance and helping our staff to understand the coffee making process.

We also enjoyed a coffee tasting session which featured a large selection of coffees from different countries across the world, this really helped our team to understand the difference in blends and widened our knowledge of coffee flavours.

This in depth Level 2 course also featured lessons in grinding, dosing and tamping, knowing the function of milk and the effect of different fat content, hygiene health and safety elements and latte art.

It’s safe to say the coffee training course has been hugely enjoyed by everyone, and we will soon be taking the next group of staff to complete their Level 2 courses!

The Adams and Russell Coffee School

Every coffee school course from Adams and Russell is run in partnership with the ‘Speciality Coffee Association Authorised Trainer’ Andreas Constantinou. He has an in depth of knowledge and experience in coffee, brought up in Greece, he successfully introduced speciality coffee to the public through coffee shops and restaurants throughout the North West.

Andreas and Adams and Russell are brilliant at imparting knowledge which really excited and enthused our staff.  They provided a detailed understanding of how to entice the very best from every ground coffee bean and continually look to produce the best cup of coffee possible.

Our very own Lawrence and Katie Kenwright have been announced as one of the three nominees for the coveted Outstanding Contribution to Liverpool’s Food and Drink Scene. They are up against Director of Izakaya, Harry Marquart and Dockside Dining Club’s owner, Andrew Duckworth.

The Liverpool Food and Drink Festival Awards have quickly become one of the most anticipated nights of the year for those working in the local hospitality industry and this year is no different.

Isabella Kantor, Festival Manager at Liverpool Food and Drink Festival, said: “The Liverpool Food and Drink Festival Awards, now in their 11th consecutive year, have long been considered a highlight on the events calendar for those involved in the city’s food and drink sector.

The Shankly Hotel: Our Experience as an Autism Friendly Hotel

At Signature Living, we’re passionate about the experience we offer our guests and customers. We strive to ensure that everyone’s Signature experience is a special one.

In 2016, The Shankly Hotel became the first autism friendly hotel in Liverpool. And we’re setting out to spread the message, helping the city to develop a better understanding of this lifelong disability.

Our staff at The Shankly and the hotel’s Bastion Bar & Restaurant attended specialist training and awareness programs. This equipped our staff to develop the skills and understanding required to adapt and assist autistic guests and their families.

Recently, we had a lovely little boy and his parents join us for a stay at The Shankly. And our very own Adam Garvey was able to put his training to the test and engage appropriately and effectively, leaving plenty of smiles on faces!

So, we sat down with Adam to find out a little more about his training and most recent experience…

What does it mean to be an autism friendly hotel?

Basically, where it all started was when we got invited to a training session and when we went along there was a lady there and her son was autistic. She explained about how to deal with certain situations, coping with outbursts and things like that. Something that you would never ever know unless you lived with someone or knew someone with autism.

To work here knowing what we learnt, you can now see, things come to light now when guests come in and it’s being able to adapt to those guest’s needs so that they have the same experience as everybody else.

What did the training that you received involve?

It pretty much focused around her story of how she’s experienced her son growing up and noticed behavioural differences and things like that. And then obviously she was trained and went to mentoring on how to deal with her son and how to calm him down, just to make them as happy as they can be by learning more about what they need.

What happened with the little boy that came to The Shankly Hotel last week?

Yeah so, he was staying with his family because the hotel has jacuzzi baths. He can’t get a shower because he doesn’t like water on his head as it makes him distressed and things like that. Now, he was put into an accessible room, which only had a shower. On his booking, it wasn’t mentioned that he didn’t like showering, so we never knew this. They just presumed that every room had a jacuzzi.

So, when they came to the desk his mum told me about the situation, she wasn’t complaining, she was lovely. She just wanted to let me know that obviously he’s not had the experience that they thought he would. And straight away I knew he was autistic, before his mum actually told me.

To try and rectify the disappointment of him not having the jacuzzi, I thought how can I make it better? And then that’s when I spoke to the little boy and asked him what he likes. He said he really loves Toy Story. So his mum said they were going shopping for a bit and would be back to see me to pay the car parking. So I thought in that time frame, go out, get something for when he comes back.

And his little face when he came back! I just walked over with the Disney bag and he literally shot up off his chair. He didn’t even know what was in it, he was just really excited!

It’s so great that your training has helped you to recognise these things without having to be told…

Yeah, I think with illnesses and disabilities, you know, there’s loads of things that go on, that you don’t always know about. They’re not always visible. I mean we could have a guest in a wheelchair or on crutches and that’s visible. But with mental illnesses and things like that you just don’t know unless you’re told or trained on what to expect.

Is there anything you’d advise people to do to gain a better understanding of autism?

For me its so beneficial. Personally, I don’t know anyone who is autistic. So, for me, I was thinking whats the point. But that was the point. To be able to see a situation and notice it, that’s everything. His mum and dad were so surprised when I told them that I had been trained and that I knew how to deal with situations like it, they were over the moon. I knew how to speak to him and everything. They couldn’t believe it. And they were even more shocked that the Shankly is an autism friendly hotel, because it is something that is quite rare.

The Shankly was the first autism friendly hotel and there are a few more now in Liverpool, but it’s still very rare. Would you agree?

Yeah definitely. For us to get the certificate, I think there was about 50 of us that did the training and all of us where literally gob smacked with what was being said because you just don’t realise that these things go on.

What would you say the main skill is that the training gave you?

Just being able to make that guest happy. I now know how to communicate with that guest and how to be with them, whereas, before I could have said something totally wrong and could have upset him and thankfully that didn’t happen.

So, I think in the future, across all of our sites it would amazing if we could have that training. And you know, it wasn’t just me who would have seen that little boy, the housekeepers could have, the restaurant staff, so I think its important that everyone learns these skills.

Looking to the future, do you think this is something that should be implemented across all of our sites?

Yes definitely. Because I mean, that little boy will go home and tell is friends. His parents will tell other parents and it’ll start to sell itself really.

Our Signature Sailors Have Set Sail for Tall Ships 2018

This week, our Signature sailors set sail on a Tall Ships adventure. We chose 5 lucky Signature Living employees to take party in this unforgettable experience.

We’re sponsoring our team to join 9 other trainees and 6 skilled crew members to travel on the ‘Maybe’ tall ship.

Sailing from Dublin to Scotland, the team are set to spend 7 days on board. And we can’t wait to hear all about it.

A fantastic self-development opportunity, this voyage will test commitment and build upon leadership and teamwork skills.

TS Maybe

TS Maybe boasts a fascinating maritime history. Built in 1929 and owned by Jan Jacob Van Rietschoten, TS Maybe spent years sailing the world, and famously won the Whitbread Round the World Race twice.

Notably, TS Maybe took part in the first ever Tall Ships Race back in 1956. Today, she is one of few boats still competing in the Tall Ships Races! So, we couldn’t have been more pleased with our Signature Sailors jumping aboard.

While on board, our team and the rest of the crew ensure that Maybe sails smoothly 24 hours a day. Working together with a three watch system, keeping watch is split into Red, White and Blue.

The system means that everyone has to work together. The ship can’t sail safely without everyone pulling their weight.

Each crew member has the chance to keep watch, steer the ship, learn traditional sailing techniques, log book entries, plot the course, set the sails and of course, catch some beautiful sights and have plenty of fun along the way.

The Structure of the Ship

The TS Maybe ship is a gaff ketch. According to maybe-sailing.com, this means that the sails of the ship are four cornered, fore-and-aft rigged and controlled at its peak by a spar (pole) called the gaff.

The key characteristic for distinguishing if a boat is a Ketch is that the mainmast (the forward of the two masts) is bigger than the after mast. TS Maybe has a total of 7 sails. The length of the ship overall comes to 28m in length while the height of Maybe’s main mast is 25m.

Maybe-Sailing describes the ship as ‘a strong sea worthy vessel build with extra strength by using steel frames, a hardwood hull and teak decking.”

When it comes to the inside of the ship, TS Maybe is split into three key areas. You’ll find a 6-berth cabin and shower room located in the forepeak of the ship.

In the midships area, crew will discover the galley, saloon, 4 more cabins and another shower room.

Last but not least is the ‘dog house’ section of the ship. This sleeps 2 crew members and is also home to the navigations and radio equipment, as well as the engine room.

Not bringing a portfolio and examples of work (for a design job!).
Being unprepared – be ready for questions relating to you skills, creative process, inspirations and work.

6) What is the best thing a web designer can do to improve?

I think the best way designers improve is by working alongside other talented designers and creatives. It gives you the opportunity to see a fresh approach to a problem and opens you up to different styles and techniques.

Also, get your work critiqued regularly and listen to the feedback. Rather than see it as an attack, take on board the comments use it to improve your work.

7) How should a web designer present their work in an interview?

Bring an iPad or laptop (make sure it’s charged!) and be sure your work is presentable offline – don’t assume you will be able to join the companies network to show off your web skills!

Have a portfolio that talks about how you came to the final design, and be prepared to explain why you made the decisions you did. Where possible make your portfolio relevant to the position you’re applying for.

8) Would you say the office environment is more formal or informal?

Our team works similarly to a design agency so we prefer an informal approach, no shirt and tie necessary!

9) What sort of projects will the designer be working on day-to-day?

Holding pages and full website designs for our hotels, landing pages for offers and events, social media campaigns and email newsletter/templates.

10) What is the best thing about being at web designer for Signature?

1) Forgetting to Do Research

Research is key when it comes to a successful interview. When you’re busy rehearsing talking about yourself, it’s easy to forget that it works two ways. You need to know your stuff when it comes to them. This simple factor could set you apart from other candidates with similar experience.

So, take some time to research the history of the company and keep an eye out for any brand values or mantras. How can you align with them? Knowing what the company stands for and what their foundations are can help you to tailor how you present yourself. This all gives you a fantastic opportunity to relate your personal qualities and professional experience to their values.

2) Feeling too Underdressed

These days, it’s not too tricky to figure out what to wear for interviews. But make sure you take a moment or two to double check. It’s always better to be overdressed than underdressed. But what you’re wearing can help you with your confidence, so make sure it’s comfortable.

Just as your body language should feel natural, so should your answers to questions. It’s great to feel prepared but it’s better to think of your interview as more similar to a Powerpoint presentation than a speech. A One of a Kind Venue

New Liverpool Restaurant Coming to the Cunard Building

This week, we revealed more about our plans for one of the stunning Three Graces, the Cunard building.

Set to create a multitude of new jobs in Liverpool, there’s plenty to look forward to.

The beautiful Grade II* listed building is located at the Pier Head, along Liverpool’s picturesque waterfront.

The bustling area attracts tourists and locals throughout the year, offering breathtaking views of the city and the perfect balance of history, culture and entertainment.

The Cunard couldn’t be in a better location for special celebrations and scenic days out. That’s why we’re planning on transforming the 18,000 sq ft ground floor of the Cunard into a spectacular restaurant.

Signature Living founder Lawrence Kenwright told the press he “absolutely” expects the restaurant to be the best in the city, so local foodies can certainly get excited.

Speaking to the Liverpool ECHO, he shared:

The ground floor is Grade II* listed so we have had to do a report with a heritage specailist. We are not knocking anything down, but it is 18,000 sq ft so we need concertina doors to give you the flexibility.

That means you can open up the full 18,000 sq ft for some events, but then have break-out rooms for smaller events, without that it doesn’t work.

The Cunard is undoubtedly one of the best spaces in the city, so it couldn’t be more fitting for a high quality restaurant. Visitors to Liverpool will be able to dine in luxury without compromising on gaining an atmospheric feel of the city.

Discussing ambitions for the new project, Lawrence emphasised:

The London Carriage Works is currently the best restaurant in the city with two AA rosettes. It’s our intention to get three or four rosettes – we absolutely want this to be the best restaurant in Liverpool.

Signature Living Reveal Plans for Croxteth Hall Transformation That Gives Back to the Community

Signature Living have revealed ambitious plans to transform the historic Croxteth Hall into a luxury hotel and wedding venue, with a training centre and donations to the Croxteth community.

The plans are set to include a hospitality training centre in the hall for local people and an estimated £500,000 from the project will be given to the Croxteth community each year.

Liverpool Council have stated they can no longer afford the upkeep and running costs of this once magnificent Grade II* building and are therefore on the lookout for a new operator to take it on.

With a proven track record of transforming derelict and empty listed buildings into high-end luxury venues, Signature Living are excited about the prospect of boosting the Croxteth community.

A Centre of Excellence

As well as the development plans, Lawrence Kenwright’s vision will see local people from the Croxteth area given the chance to train and learn skills within the hospitality sector.

A centre of excellence will be created with a vision of training future Signature Living employees, which will also help boost employment figures. Lawrence said:

“There are a lot of unemployed people in Croxteth, we have just taken on 30 people from there in the last six months and some of them are our best workers.

“This means people from Croxteth could work in our sites in Cardiff, Glasgow, Belfast and all these great cities – they can move up the chain to be anything they want to be, anywhere they want to be.”

Giving Back to the Community

The Signature Living boss has also promised that if his proposals are successful, 33% of its pre-tax profits would go directly to local people in the form of charitable donation.  This has been estimated to around £500,000 per year.

“The idea would be to set up a charitable board of six people and unlike other grant funding for charities, this will be used for whatever we want to use it for and will be more about people – it will be a quick and easy process.”

The Plans

Signature Living have proposed to transform Croxteth Hall into a luxurious hotel, spa and wedding venue.

Set to take just one year to complete, the plans include a unique Signature Living stamp with ‘glamping’ and ‘Hansel and Gretal treehouse’ rooms.

These ambitious plans are typical of Signature Living and Lawrence’s ambition to create a successful hotel and wedding venue outside of the city centre:

“You’ve got to have an edge – you can’t just open and say we are here – it’s got to be something that is different from everywhere else – but these are not things we can do without the say so of the council.”

Weddings are a huge part of the amazing new plans.

Croxteth is already a functioning wedding venue, however, currently they are few and far between. Lawrence sees the number of weddings per year increasing from 20 to 200.

He also stated that the addition of a luxury hotel will increase the appeal for wedding planners, as guests will have somewhere to stay afterwards.

The Future of Croxteth

Signature Living are passionate about saving an asset like Croxteth Hall, redeveloping it for the better and opening it for the local community.

Currently, Croxteth Hall is open just 25% of the time and they charge £6 to get in, when it’s a hotel it will be open to everyone all the time.

“All the good stuff with the wood panelled walls, paintings and great views – that will all be open to the public – these places can’t be museums anymore as there isn’t the funding for them.”

Liverpool council have made it very clear that they will only hear bids that respect the listed status of the building and have a strong vision of maintaining the heritage of the site. They have also stated the importance of maintaining public access to the grounds.

Lawrence is also very passionate about this:

“It will be interesting to see if the others have the same understanding of listed buildings that we do – when it comes to taking listed buildings from semi-dereliction to hotels, I don’t know anyone that does what we do in the UK.”

The council is currently inviting developers to put their ideas forward and it is hoped a bid could be selected within three months.

This time, the search was on for outstanding catering and banqueting staff for the beautiful and ever popular Garden of Eden venue, situated on the rooftop of The Shankly Hotel.

Louise Riley, Recruitment Manager for Signature Group, organised and orchestrated the day, leading the potential recruits through a series of tasks to demonstrate their suitability for life as a representative of the sought-after venue.

Louise was joined by C&B manager Lucy Woodford, Bar Manager Adam Taylor and Eden Supervisor Michelle Hopper to help find the future Signature Stars. The first task saw the candidates create mood boards that they think represented Signature Group, and the team at Table One stole the show with their observations on the importance of food and beverages at Eden. Our iconic and amazing Afternoon Teas are a stand-out fixture at all our developments and the importance of these was demonstrated incredibly well by Table One.

The next part of the lively session was an interactive questionnaire. Each hopeful was given a task to identify key members of Eden’s, and The Shankly Hotel’s, team and find one interesting, unusual or unknown fact about that person.

The hotel’s General Manager was the first piece of the puzzle, and the applicants were delighted to discover Duncan Stewart has a penchant for dressing as The Rocky Horror Picture Show’s Frank-N-Furter. Wedding Co-ordinator Ciara Martin was harder to crack and only one team managed to find out she has a love for playing the drums.
